Katherine Elizabeth Joseph Knowles
February 11, 1958 - April 16, 2018

Katherine Elizabeth Joseph Knowles entered her eternal rest at age 60 on April 16, 2018 in Lubbock, Texas and is now face to face with her Lord and Savior. She is survived by her beloved children, Justin Knowles of Lubbock and Lindsey Knowles Woo, of Austin; her father and stepmother, Donald R. Joseph, Sr. and Dolly Joseph, also of Austin; her three brothers, Don Joseph, Jr., Neil Joseph and Kelly Joseph; her daughter-in-law, Andi Knowles, and two grandchildren, Parker Graham Knowles and Beckett Isaac Knowles. Her mother, Patti Dix Joseph, and son-in-law, Jake Woo, predeceased her and have now been reunited with Katherine in heaven. Following a long illness, Katherine passed away peacefully, after being surrounded at her bedside by many of those she loved.

Katherine grew up in Norman, Oklahoma and Austin, Texas where she attended Round Rock High School. Like many in her family, she graduated from Texas A&M University, where she earned a B.S. degree, and she was a staunchly proud Aggie for the rest of her life. Following graduation, Katherine embarked on a career as an educator, coach and mentor and inspired many in her role as a primary school teacher. She stayed in contact with many of her students throughout the years, who loved her dearly.

Katherine married Mark Knowles in 1980, and Justin and Lindsey soon became the center of her life. She and Mark remained devoted and caring parents during and after their marriage. Upon the arrival of Parker, and later Beckett, she became a doting grandmother and enjoyed sharing time with both of her grandsons.

Her faith in Christ was the rock of Katherine’s life, a constant source of strength and resilience in the face of all challenges. She shared this faith with many and inspired strength in all she encountered. She fought the Behcet’s Disease which affected her in later life, remaining relentlessly optimistic and desirous of helping others with Behcet’s through participation in research.

Services will be held at Pennington Funeral Home, in San Marcos, Texas, on April 21, 2018 at 4:00 p.m., followed by burial at San Marcos City Cemetery. In lieu of flowers, donations are requested to be made in Katherine’s memory to the American Behcet’s Disease Association, P.O. Box 80576, Rochester, MI 48308, or the charity of your choice.
